Always hungry for Lunch

Lunch, it’s a meal that tend to happen in the middle of the day, and is the filler between breakfast and dinner or for many people is like breakfast being their first meal of the day.  It can be easy to forget about if you are in the midst and chaos of trying to plan for dinner, especially if you’re camping with a larger group of people and have to worry about. But when you are camping nothing should be stressful and everything should be quick and easy. Here are some delicious meals you can prepare for ahead of time. Enjoy!

Taco Bowls
This recipe is very flexible as you can prepare as much or as little as you would like.*Tip* Avoid washing dishes by using the chip bag as your bowl. 



Ingredients:

- individual serving bags of your favorite chips (or to save money one big bag of chips to share)
- ground beef
- 1 package of taco seasoning
- salsa
- sour cream
- lettuce
- onion
- grated cheese
- anything else you enjoy in your tacos

Preparation: 

At home (if you would like): Cook beef and add taco seasoning, as per package. Let cool and place in a travel container. Chop all the vegetable and also store in a travel container. Place everything in a cooler to keep cold in your travels. 

At Camp: Re-heat cooked beef. Crumple chips. cut bags of chips long side making a bowl like area. Add meat, vegetables, salsa, and sour cream. Top with shredded cheese. ENJOY!

Egg Salad Sandwich

This recipe is great because it can be made at the campground, or in advance. 

Ingreditents: 
- 6 hard boiled eggs
- 1/4 cup mayonnaise
- 1 tablespoon mustard
- 1 stalk celery, chopped
- 1/3 onion, chopped
- 1 teaspoon lemon juice
- salt and pepper to taste

Preparation: 

Hard boil the eggs. Bring water to a boil before adding the eggs. Boil the eggs for 10 minutes. Let them cool to room temperature before peeling. Chop the celery and onion and place in a mixing bowl. Peel and chop the eggs, and add them to the bowl. Add the mayonnaise, mustard and lemon juice. Salt and pepper to taste. Mix well and chill for a few hours before turning into sandwiches. Enjoy! 

Individual Tortilla Pizzas

This is the easiest recipe, with each person getting a chance to design their own specialized pizza. 

Ingredients: 

- tortillas
- pizza sauce
- cheese
- toppings of choice like pepperoni or peppers or both!

Preparation: 

Place the pizza sauce on the tortilla. Add toppings of choice, then cover with cheese, or cheese then toppings! Place over the campfire or grill and bake. 

Roasted Potato Salad

Ingredients:

- 4 cups small red potatoes, unpeeled and quartered
- 1 cup mayonnaise
- 4 slices crisp bacon crumbled
- 2 hard boiled eggs, chopped
- 1/4 cup green onions, sliced
- 1/4 cup red onions, sliced
- salt and pepper, to taste

Preparation:

With this recipe you can make it either before you leave the house and store it in a cooler or you can make it while camping. if you make it while camping you can roast the potatoes over the campfire. If you are making it at home, preheat the over to 425 degrees F. Place potatoes on a baking pan coated with cooking spray. Bake 30-35 minutes or until tender and golden brown, flipping occasionally. Mix together mayonnaise, bacon, eggs, onion, salt and pepper in a large bowl. Add potatoes and mix. Serve warm or chilled.
